Pasta salad with fish by Chef Jakob Hausmann

Ingredients
  • 200g Monte Banato pasta
  • 2 tablespoons white balsamic vinegar
  • 4 tablespoons olive oil
  • 1 tablespoon mustard
  • 4 tomatoes
  • 5g tarragon
  • 250g peas
  • 250g smoked fish
  • 1 lettuce head
  • salt
  • pepper
Method

Step 1: Scald and peel the tomatoes, remove the seeds, and cut them into small pieces.
Step 2: Mix the mustard, white vinegar and olive oil, then season with salt and pepper. Add the tomatoes to the dressing.
Step 3: In a pot, start boiling the water, tarragon, and salt. Add the Monte Banato pasta and boil until it becomes ”al dente”. Strain and cool the boiled pasta, then add it to the tomatoes and dressing mix.
Step 4: Keep the pasta water and boil the peas, then let it cool down and add it to the pasta.
Step 5: Mix everything well in a bowl.
Step 6: Place some lettuce leaves on a plate, then add the pasta salad on top, along with the smoked fish.
