  • 200g Monte Banato square pasta
  • 100g smoked bacon
  • 150g full-fat cottage cheese
  • 60g sour cream (20% fat)
  • Salt and freshly ground black pepper
  • Sweet paprika for garnish (optional)
Method

Step 1: Cut the smoked bacon into small cubes. In a large skillet, add the bacon and fry over medium heat until golden and crispy. Remove the crispy bacon pieces onto a paper towel to drain excess fat, but keep the rendered fat in the skillet.

Step 2: In a bowl, mix the cottage cheese with sour cream, salt, and pepper. Stir well to achieve a smooth, homogeneous mixture. Adjust the seasoning to taste.

Step 3: In a large pot, bring 4 liters of water to a boil. Add a tablespoon of salt, then cook the Tașche noodles according to the package instructions, approximately 6 minutes.

Step 4: One minute before the noodles are done, reheat the skillet with the reserved bacon fat. When the noodles are ready, drain them well, reserving a ladle of the cooking water. Add the noodles to the skillet and toss gently to coat them in the aromatic fat.

Step 5: Add the cheese and cream mixture to the noodles in the skillet and mix gently to combine. Leave on the heat for 1-2 more minutes, until everything is well blended.

Step 6: Serve the noodles in deep plates, topping each portion with the crispy bacon bits and a sprinkle of sweet paprika, if desired. Enjoy immediately to savor the comforting flavors and textures.
