Ingredients
  • 300g Monte Banato Macaroni
  • 9 eggs
  • 6 tablespoons sugar
  • 300ml cooking cream
  • 2-3 tablespoons raisins
  • Zest of 1 lemon
  • Juice of ½ lemon
  • 50g butter
  • 500g Greek yogurt
  • 4 tablespoons sugar
  • 1 teaspoon vanilla paste
Method

Step 1: In a large pot, bring salted water to a boil. When the water starts boiling, add the pasta and cook for 5-6 minutes, 1-2 minutes less than the package instructions. Once cooked, drain the pasta and set it aside.

Step 2: While the pasta is cooking, prepare the cream. Beat 6 eggs with 6 tablespoons of sugar until the sugar is completely dissolved. Add the cooking cream, lemon zest, lemon juice, and raisins, and mix well. Once the pasta has cooled slightly, add it to this mixture and stir to combine.

Step 3: Grease a baking dish with butter and pour the pasta mixture into it, spreading it evenly across the surface. Set the dish aside.

Step 4: In another bowl, beat the remaining 3 eggs with 4 tablespoons of sugar and the vanilla paste. Add the Greek yogurt and mix until smooth. Pour this mixture over the pasta in the dish. Place the dish in a preheated oven at 180℃ and bake for 1 hour.

Step 5: Once the pudding is baked, remove the dish from the oven and let it cool. Serve cold.
