Large noodle pasta with salmon and asparagus

Ingredients
  • 200g Monte Banato large noodles
  • 2 tablespoons olive oil
  • 400g salmon
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 2 lemons
  • the zest of 1 lemon
  • 30ml lemon juice
  • 300g sour cream
  • 1 tablespoon capers
Method

Step 1: Start by boiling the water.
Step 2: Cut the asparagus and put it into a bowl.
Step 3: In a pan, add olive oil and fry the seasoned salmon.
Step 4: Place the pasta in the boiling water and boil as said on the package.
Step 5: In the meantime, cut the salmon into little pieces and add the lemon zest, lemon juice, asparagus, sour cream and capers to the pan.
Step 6: Season the mix with salt and pepper, then add 50 ml of pasta water and start mixing.
Step 7: Strain the pasta and add them to the pan. Mix.
Step 8: Cut a lemon into quarters and place it over the pasta.
Step 9: Plate and enjoy!
